grandpa’s chicken tortellini soup.

for those of you who haven’t been around since the original days of my blogging, i started cooking my way through my grandpa’s soup cookbook in september of 2013, with the goal of completing all the recipes. i have made 17 of them so far and i have about the same amount left, so we’ll call it halfway. the ones i’ve made have all been delicious and loved by many people i’ve never even met in real life.

i realized that i never posted a few of the ones i made in 2017, so i will be remaking them and sharing them both here and on instagram. my grandpa loved cooking these soups for his family and i hope that the recipes bless your families with love in his memory!

chicken tortellini soup (serves 6-8)

  • 1 C. onions, chopped

  • 1 C. carrots, sliced

  • 2 cloves garlic, minced

  • 6 C. water

  • 32 oz. chicken broth

  • 1 can cream of chicken soup

  • 2 C. shredded or chopped chicken (i use rotisserie chicken)

  • 1/2 C. dry vermouth (optional)

  • 1/2 tsp. dried basil

  • 1/2 tsp. dried oregano

  • 9 oz. package cheese tortellini

  • 9 oz. bag frozen cut broccoli, thawed (or not because i forgot)

in a soup pot, sauté onions, carrots, and garlic in butter or olive oil until softened, about five minutes. add the rest of the ingredients, except tortellini and broccoli, and bring to a boil. once boiling, add tortellini and simmer 30 minutes. add the broccoli and cook 5-10 minutes more until everything is heated through.


this would be a great Lenten Friday meal if you use vegetable broth and skip the chicken, it’s really hearty!
