itty bitty mini banana bread.

you know what's a good stress relief? baking. cracking eggs and mixing batter by hand (it has to be by hand for the stress relief part.) mashing bananas is great for this.so considering that yesterday, my day was like this... 

 ...i needed a way to release some stress. (having a virtual wine date with this lady helped too. like whoa.) and i decided to make some banana bread. itty bitty mini banana bread to be specific.banana bread, baking, mini loaf pans, recipebanana bread, baking, mini loaf pans, recipethis is a recipe that i've had in my recipe box for a while, and i can't remember where i got it. maybe betty crocker? maybe online? maybe mom?who knows, who cares? i just know that it's delicious and i love it. except i am not eating any of these adorable mini banana bread loaves. they are for my lovely neighbors, who i am trying to bribe with my baked goods. these babies should ensure that Mister Man and i can borrow tools or snowblowers from any of them, whenever we want.banana bread, baking, mini loaf pans, recipei think the greek yogurt adds just a little bit of richness that some banana breads don't have. and this is good, because i don't know about you, but i need my banana bread to be as dessert-like as possible.banana bread, baking, mini loaf pans, recipebanana bread recipe makes 4 mini loaves (or 3 mini loaves plus 1 regular loaf)

  • 1 tsp vanilla extract
  • 2 C. all-purpose flour

preheat oven to 350 degrees F. lightly grease and flour your loaf pans.mash the bananas and stir in the greek yogurt. set aside. cream together the butter and sugar in a large bowl until fully mixed together. beat in the eggs one at a time, then add the vanilla and the banana/yogurt mixture.in another bowl, combine the flour, baking soda, baking powder and salt. stir into the banana mixture, but do not overmix. pour the batter into prepared loaf pans, and bake 40-50 minutes, until a toothpick inserted in a loaf comes out clean. the time may vary depending on your oven's heat.let the loaves cool in the pans for 10 minutes, then turn out on wire rack to complete cooling.banana bread, baking, mini loaf pans, recipe
